Meat

I tend to use minced beef most of the time. But chilli is also tasty if you use lamb, chicken, turkey or pork

Chili Spice

Use fresh chillies or chilli powder, your choice. And as much garlic as you and your family like.

Using supermarket chilli sauce.

In recent years, there are many more healthy sauces available in the supermarket. Look for chili sauces with all natural ingredients. No preservatives, colors or E numbers either.


Garlic

I love to use fresh garlic. You can use garlic powder if you wish.

How to make Healthy Chili...

Serves 4

Ingredients

  • 1 lb of lean minced beef
  • 1 14oz tin Italian chopped tomatoes
  • 2 medium plum tomatoes finely chopped - optional
  • 1 14oz tin of red kidney beans drained and rinsed well
  • 2-4 fresh garlic cloves crushed
  • 1 tsp chilli powder or 1-2 fresh chilies deseeded and finely chopped
  • 1 tsp coriander
  • 1 tsp paprika


Preparing your healthy chili recipe...

Add the mince to a large size pot, preferably with a lid.

I always use a pot with a glass lid, which is useful for checking what's happening in the pot without having to keep lifting a metal lid off. Keeping the lid on also stops the flavors escaping.

Break the mince up in the pot and cook until brown.

If the mince starts to stick add a little hot water.

Drain any fat off using a sieve and pop the mince back in the pot.

Add fresh garlic.

Stir and simmer for a few minutes.

Add fresh chillies, coriander, paprika

Cover and simmer for a few minutes to let the flavours develop.

Add the tin of tomatoes.

Stir through the mince.

Simmer for 5 minutes.

Add kidney beans, mix well.

Simmer until the sauce reduces to a thick consistency.

Chili a bit too spicy?

Serve a tablespoon of low fat greek yoghurt which helps cool spicy food!
