Ingredients for Crispy Jacket Potato Recipe

  • 8 Medium Potatoes with skin on
  • 2-3 tbsp Olive Oil
  • 3-4 garlic cloves crushed - optional


Preparation

Pre heat your oven to 175c

Wash and dry the potatoes

Set to one side

Using a large bowl, add the olive oil

Crush the garlic into the oil and stir to mix thoroughly

With clean hands, roll each potato in the oil to coat all over

Place each potato on a large baking tray

When all potatoes have been placed on the baking tray, put the tray in the centre of the oven.

Bake for approximately 20 minutes before turning over with a slotted spoon.

Continue to bake until the potato skins have puffed slightly and crispy.


How to test that the potatoes are ready.

Use a wooden or steel kebab stick to pierce the centre of each potato. If the middle is slighly hard, return to the oven for 5-10 minutes more.

Any leftovers can be stored in the fridge for 3 days.

Wrap each potato individually using foil.

Reheating

When reheating, you can either pop them back in a pre heated oven to crisp them up again or for a quick reheat pop in the microwave oven for 2-3 minutes.
