Healthy Fish Soup Recipe, This recipe is my favourite. It's so filling and nutriitious.

A real heart healthy soup which is really more like a stew which you can have for dinner, I'm Irish, so tend to make soup thicker and more substantial than some.

I make it with fresh fish and vegetables in season, which is much better for you.

You will dramatically improve your family’s health and brain power, with this easy healthy fish dish.

Fish

You can add any fish or seafood you like to this soup. When I want to make a cheap and easy fish soup, I simply use cod, haddock, or other white fish. Look out for special offers at the fish shop or supermarket. Experiment with different types of fish and seafood.

Vegetables

Fresh tomatoes are best. Italian plumb tomatoes are really tasty. You can substitute with tinned tomatoes,

Other vegetables! I use whatever fresh veg I have in the fridge. Celery, Courgettes and Fennel are great to add for extra flavour, colour and extra nutritional value of course!




Ingredient for a Healthy Fish Soup Recipe...

Serves 4-6

  • 1lb white fish - cod, haddock or any other, sliced in cubes
  • 4 large tiger prawns or 12 ozs small prawns - optional
  • 4 vine or Italian plum tomatoes
  • 2 courgettes
  • 2 sticks celery
  • bunch spinach chopped
  • 4 garlic cloves crushed
  • 2 tbsp chopped parsley
  • 1 litre fish, chicken or vegetable stock
  • 2 tbsp olive oil
  • 2 bay leaves

Preparation...

Heat the olive oil in a large pot. Add the onion and sauté for 2 minutes

Add the crushed garlic and continue to sauté for 2 more minutes.

Add the chopped tomatoes, courgettes, celery and bay leaves.. Mix well.

Pop the lid on to sweat and coat the vegetables in the oil for 5 minutes.

Add the stock, bring to a boil then reduce the heat and simmer for 20-30 minutes.

If using large uncooked prawns, add them at the same time as the white fish.

Simmer on a low heat until the fish is just cooked through.

Sprinkle in the spinach and parsley mix through. Leave on a low heat for a minute or two to let the flavours combine. Remove the bay leaves.

Serve in warm bowls with fresh crusty wholemeal rolls or french stick.

Can you freeze leftover fish soup...

It's really important to be careful about storing and freezing fish.

If you use only fresh fish to make this fish soup recipe it is safe to store in the fridge for 2 days.

If you want to have at a later date it is safe to freeze, as long as all the fish was fresh.

Any previously cooked fish or seafood you may have used should not be refrozen after making your fish dish.
